Summer's Best Salad – Sweet, salty, tangy and hot! | Let's Cook!

This recipe was a hit from day one! It is very easy to make, refreshing, savory and sweet. Enjoy it with your favorite barbecue or all by itself. It is delightful – Bon appetit!!


• 1 cup olive oil

• 2 tbs fresh lime juice

• 2 tbs champagne vinegar

• 2 tsp chopped fresh thyme

• 1 small shallot, minced

• 1 serrano chili pepper, stemmed and sliced into small 1/2" rounds

• Salt to taste

• 1 small seedless watermelon

• 1/3 lb wedge feta cheese, sliced 1/8" thick

• 1 bunch of fresh arugula

• Serrano chili pepper, sliced, for garnish
